I’m not talking about pizza or chinese, a la college. Last night we had a birthday dinner for the lovely Miss Lisa…spaghetti, french bread, and cheesecake were on the menu. We had a wonderful time, so glad Lisa decided to share her day with us.
Fast forward to this morning. It is a gloomy, overcast, chilly(ish), lazy kinda morning. I have about a quarter of the loaf of french bread sitting on the counter. I’m thinking FRENCH TOAST! Just enough for me & little Em. I was so happy to find all of the ingredients on hand. This is one of those recipes I just accidentally came up with…and it was awesome. The texture of the middle of the bread when done is custard-y (one of my favorite things on the planet).
Here’s what you do: Beat 2 eggs with 1 can of evaporated milk in a shallow & wide dish, sprinkle in cinnamon (do this to your liking). Slice french bread into 1 inch pieces. Put bread slices into egg mixture & allow them to soak it up like a sponge. Cook on a hot (greased…I use butter) griddle or frying pan over medium-low heat. Flip when browned. It is done when the center is somewhat firm (you can always cut it to check). Serve with whatever strikes your fancy…today I used Mrs. Butterworth’s.
Today’s secret revealed…cooking that & writing this have been the most productive things I have done today…I really need to get motivated!
