I See the Light!

At the end of the tunnel…or if you happen to live in the Charleston area, the light is the frieght train comin’ your way!  This weekend, I am blowin’ this popcicle stand kids!  Mommy/Wifey is heading out for what can only be the MOST FABULOUS WEEKEND EVER!!!  There are 10 of us girls meeting up…probably the first time all of us have been together in almost 25 years!  There are rumors of a karaoke machine, blenders, & yoga mats (we have to make up for some of the damage).  Oh my!  This better become a regular event!

We were prompted to get together by the tragic loss of a dear friend to us all…we will share our fondest memories while we make new ones…wishing she was there with us…we know she’ll be there in spirit.

Today’s secret revealed…I’ve been a SAHM to four wonderful children for a solid year now…Momma is ready for a vacation!  It doesn’t make me a bad mommy to need a little break…I will come back refreshed and ready to get ‘back to work’ just like the days when I had a ‘real’ job (insert sarcasm at ‘real’).  I’m gonna miss those little monkeys!

Never a Dull Moment

Of course I honor my Mom on Mother’s Day…I will never be able to thank her enough for giving me life & all the way through to this very moment.  She has been my biggest cheerleader, greatest friend, and teacher. 

I also want to honor my children…they have given me the amazing priviledge of being a mother…experiencing joy and love I never knew possible. 

I wrote this shortly after my daughter was born…baby #4…the biggest surprise of my life.  I thought it was appropriate as we approach Mother’s Day.  I pray that one day she will be a Mom…that she will know what it feels like to love the way only a Mom can.

“Sometimes I wonder how I find myself in these situations…lying here in this stark, cold room…voices echoing around me.  I am awake, but in this strange place in my consciousness…scared, anxious, excited, hopeful.  I am nauseous from the roller coaster of emotions.  My body shudders.  I close my eyes.  The pressure takes my breath.  Then…in an instant…with one sound, everything is new again.  She cries.  My life is whole.  My daughter emerges into this world.  The stark, cold room glows with the colors of the future.  The sound of her crying warms my soul instantly.  Her tears wash away all of my doubts…there were many.”

Today’s secret revealed…after the twins came along, it took a lot for me to be ‘done’ with having babies.  I always said ‘oh yes, we are done…but I can’t believe I am going to go through life without a daughter’.  I finally found the place of contentment…kind of relieved to be there.  God works in mysterious ways!  I cried for a month (especially at bath time) after we found out we were expecting baby #4.  It is okay to be freaked out when unexpected things happen…but I knew this would be a girl…my daughter…coming to complete our family…to complete me.

I’m Gonna Need a Funny Hat…

No, I’m not referring to the pending Royal Nuptials…though I will be watching them.  I am talking about gardening.  To quote one of the most recognizably Southern movies… “Because I’m an old Southern woman and we’re supposed to wear funny looking hats and ugly clothes and grow vegetables in the dirt…I don’t know why!  I don’t make the rules!” (it was, of course, Ouiser in Steel Magnolias that so ‘kindly’ uttered those words).  Now, contrary to my most recent post, I do not consider my self old…but definitely Southern, so I had this unyeilding desire to grow veggies in the dirt.

When we moved in, it was too late to even think about trying a garden (I can’t believe a year is just around the corner!…and I still have boxes that haven’t been unpacked!).  I started researching last year before we even moved in…I continued to sift around periodically…watching where the sun is at different times of day…making lists of what I would like to plant…trying to control myself & not ‘bite off more than I could chew’.  As spring arrived, and my daffodils blossomed (I had PINK ones!!!), I really got serious & started hounding darling husband about helping me…I leave the power tools to him, the ones we keep in the garage anyway.

I chose a spot, convinced him to help me with the construction…and we spent several hours at Lowe’s deciding on materials.  To let you know how awesome he is, he constructed my little garden on the weekend of The Masters!  Once we had made our decisions, the assembly went fairly quickly (he didn’t miss too much, and Uncle Tim kept him frequently updated on the happenings).  I wasn’t thinking that I would blog about it, so I don’t have any step-by-step pictures & the only ones I have to share were taken with my phone, so I’m apologizing in advance for the lack of quality :). 

We purchased landscaping timbers, he made a plan to stagger the stacks (kinda like you would bricks).  He bought an 18 inch drill bit & with my help holding, he drilled through the stack of 3 timbers and we placed pieces of re-bar so that there were at least 2 going through each timber.  We used the garden tools to break up the ground, spread it out evenly, and decided how much rich garden soil I would need to acquire to finish off the bed.  Being here, in South Carolina, we have alot of red clay in our soil…so I needed to ‘amend’ it (to use a fancy gardening term).  My favorite place to get my landscaping stuff is The Mulch Yard those guys are super friendly & totally knowledgeable…and, apparently, their garden soil is kinda famous…they were even out of it the first time I went…that is some demand considering the ginormous piles they have.

Pardon the messiness…see that crazy long drill bit?  This was before we added the super dark, amazingly rich, and not at all smelly garden soil from The Mulch Yard.

Again, I spent alot of time deciding what kind of plants & what support system they would need.  I looked at several tomato cages, but frankly wanted a cheaper solution…I mean, what if I’m completely unsuccessful?  Not to mention, I kinda wanted it to be visually appealing…I saw pictures of really cool supports in Southern Living and on the internet…I had bamboo in my head.  Bamboo is natural looking, and I figured it would be pretty durable (I could totally be wrong).  I found a bag of 25 for around $6…total score!  I made ‘tee pee’ type structures using twine (feeling pretty inventive & crafty when they were done).  I’m probably going to need to add a stake along the center stalk for additional support, but for now I think I’m good.

I have planted, so far, 4 tomatoes (2 of my heirloom seedlings that probably won’t make it, 1 hybrid, and 1 more mature heirloom), 1 yellow squash, 1 zucchini, 1 jalapeno, 1 New Mexican chile, 1 hot banana pepper (can you tell we like a little heat?), 2 cucumbers from seed (directly sown into the garden), basil, cilantro, Italian parsley, and Rosemary.  I have a cantaloupe that I’m going to plant in the front of the house…it needs room to spread…and the white ‘lumina’ pumpkins are going to join the cantaloupe…possibly a watermelon, too.  This may not be the typical choice for landscaping the front of your home, but it is the perfect spot…and how cool will a pumpkin patch full of white pumkins be in the fall???  I still want to get a cherry or grape tomato plant and a cucumber plant that is already maturing (I want cucumbers sooner than later).

I also got a soaker hose to run through the bed, these are supposed to conserve water…and my plan is to run it throught the garden & leave it, so I don’t disturb (or damage) the plants when I water them…and I got a timer for the soaker hose, I think I can program it to run on a daily schedule (so I don’t have to depend on my flakey memory).  I’m thinking we have in the neighborhood of $200 in the garden…not bad considering the majority of the investment is in the structure & things that do not have to be replaced. 

I hope that the storms heading our way don’t wipe out all of my little baby plants!

Today’s secret revealed…my ‘ugly clothes’ are my super old scrub pants & a tank top.  The scrub pants are awesome for yard work…they are cool, dry quickly, & I couldn’t care less if they are covered in red clay stains.  The tank has spaghetti straps, so it cuts down on the ‘farmer tan’…don’t forget the sunscreen!  You could probably find some of the scrub pants at a thrift store…look for the drawstring, unisex kind that are super thin.

Reflection

I don’t know if it is my age, the season, current challenges…all of the above…none of the above…whatever ‘it’ is, I have really been reflecting on my life, myself, my family.  I know where I have been, but where do I want to go from here?  I am ready to let go of all of the things that, for lack of a better word, bother me.  I am realizing that I can’t just ‘forget’ some things…and that I really never wanted to.  You can’t hide from who you are.

I was telling my darling husband about…something I can’t recall right now…but the point is, I said “I’m staring 40 right in the eyes” & his response was “we’re not staring it down, we’ve been running from it and now it is just catching up with us”.  See, that’s why I’m married to him…his point of view…always makes me laugh.  We’re not turning 40 this year, but it is gaining on us quickly (he’s like 2 months older than me & I really like that about him).  He probably doesn’t realize it, but that statement was pretty deep…it makes me think about all of the other things I’ve been running from that are catching up.  You can’t run from who you are.

So, I am who I am.  I channel many personalities…depending on what I’m doing…sometimes I channel my Grannie, sometimes my Mom, sometimes Paula Deen, sometimes Martha Stewart, sometimes Jane Lynch, sometimes Chris Fowler (I just wanna sit next to Kirk Herbstreit…well & get paid to talk about football).  I’m no Tara, there is only one version of me running around.  I’m no Nurse Jackie, I pretty much tell everyone way more than they want to know about myself…definitely no deep, dark secrets lurking.  All I’m saying is I think I have really ‘found’ who I am on several levels, I am happy with who I am, and I just wanna be me.  If I want to throw a modern-ish accessory in with my mostly traditional decor…I’m gonna do it.  If I cook in an apron on a regular basis, I’m not gonna be ashamed of it.  I had a ‘real-life career’.  I have the hardest job I’ve ever had, but it is the most rewarding…and it has allowed me to really find myself.  I like where I am…and really excited about where I’m going.

Today’s secret revealed…if my husband read this, he would totally roll his eyes…and if he had a blog, it would be HI-larious…if you know him, you know that ‘darling husband’ is supposed to be funny ;).

Rocking Chair Redux

I have a small obsession with rocking chairs…antiques in particular.  Currently I have 5, but am only counting 3 in the column with my ‘obsession’.  One I bought from an antique shop on Ponce de Leon in Atlanta.  I literally saw it as I drove by & made it about a block before I did a U-turn & headed back to buy it (I also bought the ‘princess bed’ there, I’ll be sharing that when I get Em’s room done…don’t hold your breath, it will be a while).  It has this awesome squeak when you rock…no sarcasm here, I love the rhythm of the squeak when I rock Em in it.  It is an upholstered rocker, it really could use new fabric…but not enough of an emergency to move ahead of other projects.

Rocker #2 is from my Grannie…everyone calls it the ‘demon chair’ because it has a gargoyle carved in the back (to ward off evil spirits).  It is in pieces…desperately needs professional help.  I have to find someone awesome to entrust this chair with.

Rocker #3 (seen above) was given to us by my MIL…it was her grandmother’s.  I love it.  When it came to live at our house, the cushion was covered in a 70’s-esque goldenrod fabric.  Not the sort that made you nauseous…but was just not very…well…’me’.  You know I use The Nester for lots of decorating advice…her “it doesn’t have to be perfect to be beautiful” has freed me to ‘go for it’ when it comes to making decorating decisions.

I have been scouring the internet and my favorite fabric stores for months looking for the right fabric to make pillows for my living/family room (we don’t have a ‘formal living room’).  I had nearly come to the conclusion that, within my budget, I was not going to find something…and was ready to move that little project to the bottom of The List.

So, I happened to drive by Hancock’s on a day my husband was working from home (therefore, there to meet the boys on the bus)…and decided to run in.  I always start at the drapery & upholstery remnant tables…I was delighted to find that they had lowered the regular price from $7/ yd to $4/ yd!!!  I immediately found this fabulous stripe…cream & light turquoise…nearly 4 yards!  It was upholstery weight, so perfect for my pillow project!  I then found a geometric pattern that looked AMAZING with the stripe…I wish there had been more, but I have enough for this project.  I was pondering what I would do with nearly 4 yards of that stripe…almost didn’t buy all of  it, but for less than $16 for all of it, I knew I should just get it all.  I was one happy girl heading home.

All it took was one look at that rocking chair with the goldenrod cushion, and I knew what I was going to do with that ‘extra’ striped fabric!

I fought with the staple gun…and enlisted the ‘expertise’ of my trusty side-kick (darling husband).  He informed me that I needed shorter staples (I totally felt blonde…at least I have the excuse).  He took care of it & in less than an hour we had that cushion covered!  Now, I will say that I had to repeat ‘it doesn’t have to be perfect to be beautiful’ to him several times (he is a crazy perfectionist)…but with an uneven cusion shaped like a trapezoid…getting those stripes perfectly straight was not happening. 

I am beyond thrilled with the results!  Don’t laugh at the felt dots on my rocker bottoms :)…4 kids will etch a floor quickly!

Today’s secret revealed…not only is the stripe fabulous, in my humble opinion, but it is also easy to clean…as I realized after last week’s W.A.C. where my daughter enjoyed chocolate chip cookies ;)…a little dab with oxyclean & the chocolate was gone!

The W.A.C.

I’m not talking about football…yet :).  I’m talking about the newly dubbed Wednesday Afternoon Club (thanks for the fun moniker Sandy!…I thought she was saying Wine And Cheese on the text where the name originated lol). 

I left Arizona a year ago, and beyond my momma, I left behind a very fabulous group of girls…that I really, really enjoyed spending time with.  It took me six years to find a great group that I could hang-out with…I vowed to myself that I would not take that long in my new town.  I moved into a nearly deserted neighborhood…there were 7 houses when we moved in…one other occupied.  Now there are 8 homes, only 1 remains vacant :). 

When that 8th house was being built, I prayed EVERY DAY that whoever was building would have kids (preferably my kids’ ages) and that they would be ‘cool’.  Me & the kids needed playmates!  My prayers were answered :).  Then, via the Stella & Dot network…a new friend moved to town…from Arizona…to my new town in South Carolina…crazy small world!  

So, the W.A.C. was born…we meet up every Wednesday afternoon…the mom’s get some adult conversation…and the kids run around like a bunch of Banshees.  Our little group grows every week…I invite everyone I can think of, what ladies don’t need some quality ‘girl talk’?!?  I knew this was going to be a continued successful gathering when all of the kids told each other “See you next Wednesday” as they departed…I totally (heart) that!

Today’s secret revealed:  I’m really quite proud of myself for pulling this together!

It Doesn’t Have to be Perfect…

To be beautiful.  I speak these wisdom filled words to myself every time I do a decorating project.  These are not my words…they are The Nester’s, but they speak volumes to me…I have adopted this as my decorating mantra.  If you would like to read my dissertation on The Nester, please do…then go visit her blog…it changed my life.

Nester declared March 22 National Take a Risk in Your Home Day…as in a ‘just do it’ decorating project…she is hosting a linky party & I love a Nester linky party!

I have been nagging (yes, after asking nicely 3 times it is officially nagging…though I continued to ask nicely 😉 ) my husband to hang curtain rod holder thingys on a small wall in my kitchen…not around a window.  I know that this may not be a huge risk…but if you know of the paint color debacle that is my home, you know that putting holes in the wall is a risk for me.  So after hanging with Johnny Depp on a plane (that may be a bit of an exaggeration, but let’s just say that I should’ve gotten a tshirt that says “my husband shared a plane with Johnny Depp & all I got was this tshirt)…he finally hung the curtain rod hanger thingys…not for curtains.  I like to decorate with things that make me reminisce…the subject today is my Great-Great-Grandmother’s rolling pin.  I thought it would be perfect decor for my kitchen & these little thingys hold it perfectly!

So here she is…in all her glory…I think of Grannie every time I look at it (I didn’t know her Grandmother).  I have other risky business in the queue for that blank space above the rolling pin…those pictures will come later :).

Today’s secret revealed…the whole ‘it doesn’t have to be perfect to be beautiful’ thing is not penetrating my brain to allow that space above to be filled…it is my perfectionism Achilles heel (photoshop)…I am really trying to let it just be, but I can’t yet.

Lemon HEL-LO!

Ever had a ‘nagging idea’?  The kind that just won’t get out of your head?  Well, a few weeks ago I had one…not the first & pretty sure it won’t be the last…this one came in the form of a recipe.  Now, I’m pretty sure that if you’re reading this (unless this is your first visit), you know that I love to cook…but ‘original’ recipes are not really my thing.  There have been a few (most involve uses for shredded chicken…a.k.a what to do with a rotisserie chicken)…but I’m pretty sure that this is a first: a baking ‘original’.  I use the term ‘original’ very loosely because this is for a Whoopie Pie…and there are so many of those out there, that there is likely a version of this somewhere in cyberspace :). 

I need to tell you a quick story first (shocking, I know).  Prior to my pregnancy with Baby Girl, I did not care for citrus-y desserts…or drinks (other than an occasional lemonade and OJ…fresh squeezed please)…this includes margaritas.  Yes, I was one of the 1% of women that didn’t like margaritas (that is a totally made up number).  I don’t know if it was a  Vitamin C deficiency, or what…but I couldn’t get enough lemon bars, lemon cake, and I craved margaritas (I refrained…calm down!).  During a portion of those 9 months, Costco carried The Cheesecake Factory’s Lemoncello Cream Torte, I had to have this…regularly.  My wonderful neighbor, Suzanne introduced me (I called her the human rubber band…you know those women…they can wear their skinny jeans home from the hospital after a baby…I am NOT one of those women LOL).  I was hopelessly addicted.  I was fine spending the $17 every other week (I said I was addicted!)…but when Costco stopped carrying it, I had to resort to other measures (a slice was like $7 at The Factory…couldn’t afford that habit).  So I researched how to duplicate it…pretty successfully I might add.  My nanny at the time, Miss Brannan, got the first one as her birthday cake.  I got a text from her saying she was eating her ‘to-go portion’ (she wouldn’t take the whole thing) in her car…with her hands…still makes me laugh!  Now that’s finger licking good!

So I had this nagging idea…for a whoopie pie inspired by that Limoncello Creme Torte!  The handheld version…it would have made Miss Brannan’s drive a little less messy!  As I said in an earlier post, the dreary days of January & February have me longing for spring…my daffodils are making their debut, and I wanted to brighten up my kitchen.

The Factory douses theirs with Limoncello, but I didn’t want these to be cost prohibitive, so I am using Lemon Simple Syrup.  I found some Meyer Lemons to use…they are beautiful & very flavorful!  I used 3 for this ‘recipe’, but removed the peel from only 2 (no pith please).

This also utilized one of my most used ‘obscure’ kitchen tools…the citrus reamer…go get you one, they are cheap & and make juicing lemons & limes SO much easier!

See what a great job it does?  I heart this little booger!

I’m using equal parts sugar & water (2 cups of each)…this will make a lot, you can reduce the amount if you want…or it will keep in the fridge for like a month :)…use it in some tea!

Combine these in a saucepan, bring it to a boil (make sure sugar is completely dissolved), then set aside to cool.  Add in the juice of 3 lemons (approx ¾ cups) once it has cooled off a bit.  Don’t worry about getting seeds in the juice, you’re gonna need to strain the whole mixture anyway :).

These pieces of peel would’ve probably been good if I had rolled them in some sugar & let them dry…but I was trying to focus on the whoopie pies…

These are the supplies I purchased…important to note:  I planned on using mascarpone cheese for this, but for $8 for 8 ounces, I decided to try a sub…the new Philly Cooking Creme is absolutely perfect!  I was concerned about using regular ‘block’ cream cheese (which is usually the recommended substitution)…the consistency was just not the same…but the ‘cooking creme’ IS!  Plus, it is new on the market, so there was a handy dandy coupon…I got it for like a dollar!  Total SCORE!

I used a cookie dropper (looks like a small ice cream scooper), so my cakes would be uniform in size.

I got 8 on a cookie sheet, didn’t want to overcrowd & have them run together.

I was afraid to let them cool too much before brushing on the lemon syrup, so these stuck a little bit…next time I will let them sit longer…one batch sat while I assembled & there was NO sticking :).

Now for the lemon creme filling…I made freshly whipped cream (almost forgot to add the sugar…cooking in chaos will do that).

Whip it until stiff peaks form…but don’t take it to the butter stage :).  My pictures of the peaks didn’t turn out…sorry.  Then I scooped this into a bowl,  and in went the lemon curd and cooking creme (no washing necessary between these steps…the whipped cream is going back in shortly)…I used the entire container of each.

YUM!  Go ahead…you’ll want to sample this…mmmmmmm.  Then fold in the whipped cream, don’t go crazy…be gentle with it. 

It just needs to be blended, not homogenized…

Now, scoop it on!

Add a lid (or lib, as Emma says)…

And try not to eat…every…single…one…in one sitting ;).  You will most likely have some creme left-over…it is good for dipping apples in…or just eating with a spoon :).

How spring-y does that look, garnished with a bit of fresh meyer lemon & some of that candied peel???  Sinfulicious, I say.

Green Eggs…86 the Ham

Well, it is the week that (I’m guessing) most schools, at least elementary, celebrate Dr. Seuss’s birthday.  I’m the ‘room mom’ for Luke’s PreK class…I got an email this morning explaining that tomorrow is the day our librarian would like a special treat for the children for the birthday celebration…cupcakes were suggested.  She profusely apologized, I had inadvertently been left out of the original email several days before.  I’m pretty laid back, so I told her “no worries, I am happy to take care of it”…because even if I had gotten the original email, I would’ve still been doing them today :)…not like I would bake or buy cupcakes a week in advance, right?  I am not nearly organized enough to plan ahead like that.  So I called our local Wally-world…I asked if they did anything with a Dr. Seuss theme, she kinda laughed and explained that it is copyrighted & they can’t…I was the 5th call she had gotten with the same request.  Not that I mind baking, it is WAY more economical…I just wanted to be sure that they didn’t have something super awesome for this very special occasion.

So as I drove down a country road (I love saying that!)…this little idea sparked in my brain…cupcakes dressed up like green eggs!  I kept thinking as I drove about how to execute said cupcakes…what could I use as the ‘green’…I didn’t want to use green icing.  I entertained gumdrops, gummy savers, candy limes (do they even make those???).  I was getting excited, because in my brain these were gonna be SUPER cute!  I headed over to WW for supplies…I found GREEN SPARKLE GEL!  Oh happy day!  It was with the cake decorating supplies, in case you’re wondering.  I also gathered some other stuff:

I couldn’t wait to get started…well, I could…I painted an antique store find before I started on the cupcakes (it was a frame…I couldn’t help myself!).  So while the paint dried 😉 I started on the cupcakes.  I decided to add a splash of color to the batter…just thought it would be more fun.

I thought the foil baking cups might be more interesting than plain white ones…some of them baked up like Mt. Crumpet, but I didn’t let that stop me.  Fortunately Ethan had baseball practice, the perfect amount of cooling time!

Then I stuffed this handy dandy tool with the store-bought frosting & got to work.  It was so fast (would’ve been faster had this little gem held twice as much) I couldn’t believe I finished before the kids finished their dinner!

It has actual decorating tips, but this is the look I was going for…and one less thing to wash.  Now I debated waiting until right before I deliver these to add the sparkle gel…but I knew I wanted to write about this, so I went ahead :).

I didn’t know what the consistency of this stuff would be…but I did one…and then did the rest.  I seriously don’t think anything could’ve worked any better than this did! 

I just love the way they turned out!  Pretty much like I imagined they would…that made it even better!  I love when I can actually make an idea translate…I just wish it worked more often.

Today’s secret revealed…I have a real soft spot for Green Eggs and Ham, I remember the first time Ethan read it cover-to-cover in one sitting…he was BEAMING with pride.
